5. Introduction: Xylitol is a naturally-occurring 5-carbon polyol sweetener. It is found in fruits and   vegetables, and is even produced by the human body itself. It can absorb heat when dissolved in water, with moisture absorbing function, and transient diarrhea can be induced when excessively taken. The product can also treat constipation. Xylitol is the sweetest of all the polyols. It is as sweet as sucrose, has no after-taste and is safe for diabetics. Xylitol has 40% less calories than sugar and, for this reason, a caloric value of 2.4 kcal/g is accepted for nutritional labelling in the EU and the USA.

Applications:



1. No Fermentation: Xylitol is anti-cariogenic because xylitol can’t be utilized by buccal cariogenic bacteria and thus prevents the growth of bacteria and acid.



2. Solubility: Xylito is soluble in water. When eaten it gives a pleasant cool and fresh sensation owing to its



character of high endothermic in solution.



3. Sweetness: The sweetness of xylitol equals that of sucrose at normal temperature; it is 1.2 times of sucrose at lower temperatures. With maltose it equals the sweetness of sucrose when xylitol exceeds half of the amount.(Test based on 10% sucrose solution as reference).



4. Stable Blood Glucose Level: The metabolism of xylitol in human body does not involve insulin and will not cause blood glucose levels to rise.



5. Chemical Stability: Xylitol has a nature of high heat-resistance; it is passive to acid and alkali; it will not react on amino phenol and protein.
