The white tea, which is processed only after being dried by sun or gentle fire without being polished or rolled, has the quality characteristics of complete bud shape, full of hair, fresh fragrance, clear yellow green soup, and light sweet taste.

White tea can be divided into four products: Baihao Yinzhen, Baipeony, Shoumei and Gongmei [20] due to different varieties of tea trees and requirements for raw materials.

As the raw materials of fresh leaves are all tea buds, and after the finished tea is made, the shape is like a needle, the pekoe is densely covered, and the color is as white as silver, so it is named pekoe silver needle.
