Attieke is the famous Ivory Coast cassava semolina/couscous (also spelled acheke)is a side dish made from cassava that is a part of the cuisine of Côte d'Ivoire in Africa.The dish is prepared from fermented cassava pulp that has been grated or granulated. Dried attiéké is also prepared, which is similar in texture to couscous.It's a common and traditional dish in Côte d'Ivoire that originated in the southern part of the country,and methods for its production are well known in Côte d'Ivoire and also in Benin.In Côte d'Ivoire, the dish is often served with Kedjenou, a slow-cooked stew. Fresh attiéké can spoil quickly, and should generally be consumed within 24 hours after cooking.
Cooking
Cassava is peeled, crushed and mixed with a small amount of previously fermented cassava and paste thus obtained is again to ferment for one to two days. At the end of fermentation time which will have eliminated much of the hydrocyanic acid that naturally contains cassava pulp is dewatered, filtered, dried and winnowed, and then update steam. After a few minutes of cooking, attiéké is ready to be consumed.
Differences with couscous wheat
The attiéké is provided with a slightly acid taste and an odor free. The least refined palate feel no difference with the wheat couscous. Yet his lighter color, more elastic and sticky texture, slightly translucent differentiate well. Its fragrance is typical.
Accompanying
The Attiéké traditionally eaten as an accompaniment to meat or fish, often with a sauce (light or seed) in southern Côte d'Ivoire, and can be eaten with the hands after formed into small balls. The attiéké can also be eaten with egg omelettes for dinner or as a snack. This meal is usually accompanied by a mixture of onions and tomatoes diced and flavored with spices and vinegar. The attiéké comes with fruits like avocado and sometimes roasted peanuts seeds.
