Crop season and production time

There is only one crop per year. The vanilla is collected green from June to August depending the area and the weather conditions.Then the vanilla pods are prepared during about 3 months and the pods become dark (red to black) depending the maturity of the pods when there are picked, the quality of the preparation and the good drying duration.

Grade A:

 This category comprises pods which are whole,

chocolate brown to reddish colour, and without any stain moisture content is 38%.

Grade B:

This category comprises pods which are whole,

sound, and more or less supple, of typical flavour, of Black

colour and which may have numerous stains, the total length

of which does not exceed half the length of the pod, as well

as a few red filaments which do not exceed one-third of the

length of the pod. The length is over 10cm and the maximum

moisture content is 30%. The vanillin content is between

1.6%-2.4%
